What makes this recipe extra healthy for body and soul?

...the answer to this important question lies in the first step...GARDENING! The healthy recipe of the day is Kale Chips, and the first step is to plant some seeds.  It's easier then it sounds and anyone can do it. You don't need a green thumb or a huge yard. Kale is a hearty plant that withstands heat and cold and can even be successfully grown in a large pot. When it comes to greens, the darker, the better. And this dark green is packed with antioxidants, iron, vitamin K, A, C and calcium and is also low in calories and has zero fat!  If your starting your garden this late into the season, consider starting the seedlings indoors in a well lit area. Or, you can buy an immature plant from a gardening or home improvement store.
Once you have an established crop, you can begin harvesting by removing the lower layers of leaves, being careful to leave a top layer so your crop continues to produce. 
Once you have your leaves, you'll want to carefully remove the ribs and tear into small 1- 1 1/2 inch pieces. Wash and lay out on a paper towel to pat dry.  
Next, lay the leaves in a single layer on a baking rake in a cookie sheet. Lightly spray or drizzle with olive oil. Sprinkle with sea salt, pepper and Chia seeds (if desired). Place in a preheated oven at 275 degrees for about 30 minutes.
 And there you have it. A delicious and healthy snack that you created from a seedling! Not only healthy for your body, but gratifying and good for your mind and soul.
