Happy St. Patty's Day!

Want to add a little green to your St. Patty's meal? Make a nice healthy dinner that will satisfy your taste buds, and soak up some of that green beer. This tortellini and garlic asparagus dish is the perfect way to eat great, and celebrate the green.
What you'll need...
1 lb cheese tortellini
1 lemon
3 tbsp unsalted butter
8 oz thin asparagus (diagonally and thinly sliced)
2 cloves garlic, chopped finely 
2 tbsp chopped fresh tarragon
Grated parmesan (optional)
What you'll do...
1. Cook the tortellini according to the package and drain and set aside.
2. Peel 3 strips of zest from the lemon and thinly slice. 
3. Melt butter in a large pan over medium heat. Add the asparagus and garlic. Season with salt and pepper and cook, occasionally tossing, until it begins to soften (about 3 min.). Crank up the heat to high and add the lemon zest and cook while tossing for about 2 minutes, until the butter turns golden brown. 
4. Toss the asparagus mixture with the tortellini and tarragon. If desired, sprinkle with parmesan immediately before serving. 
At only 442 calories per serving and 17 grams of protein, this meal is sure to satisfy your hunger, while also leaving room for that second pint of green brew.
